- Cake base place the sliced cake into cake mold
- Mango cream mousse beat the egg yolks and sugar together until light yellow. In a bowl, dissolve the gelatin in the water. Stir in the mango puree Whisk the cream until soft peak fold in the mango milk mixture gently then mix the gelatin liquid and mango flavour paste together. Finally,add the cooked sago, pomelopulps and mango dices in the mixture,pour over the cake base and chill cake till set 3)Mango glaze mix the mango jelly powder and gelatin powder well in a bowl. Dissolve with hot water. Set aside 4)Assembly Remove the mango cake from refri,top with pomelo pulp and diced mango,pour the jelly liquid on top chill again untill set
